The Coffee Cherry

Before coffee becomes a bean, it is a fruit.

Most people think of roasted beans or a freshly brewed cup when they think about coffee. In reality, every exceptional cup begins as a small fruit growing on a coffee tree. To truly understand specialty coffee, you first need to understand the coffee cherry.

Coffee Is a Fruit

Coffee grows on evergreen coffee trees or shrubs, which are covered in small white blossoms during the flowering season. Each pollinated flower gradually develops into a coffee cherry.

At first, the cherry is green. As it ripens, its colour changes—depending on the variety, it may become red, yellow, orange or even pink. Only when the cherry has fully matured can it reach its full flavour potential.

The Anatomy of a Coffee Cherry

A coffee cherry consists of several layers. Each one plays an important role in processing and ultimately influences the flavour of the coffee.

  • Skin – The outer layer that protects the fruit.
  • Pulp – The sweet fruit flesh surrounding the seeds.
  • Mucilage – A sticky, sugar-rich layer that plays a key role during fermentation.
  • Parchment – A paper-like protective layer surrounding the beans.
  • Silverskin – A thin natural skin that remains until roasting.
  • Coffee Beans – The seeds of the fruit that eventually become coffee.

Why Are There Usually Two Beans Inside a Cherry?

Most coffee cherries contain two seeds growing side by side. This is what creates the characteristic flat side of a coffee bean.

Occasionally, however, only a single seed develops. This is known as a Peaberry, resulting in a small, round bean. While peaberries are often considered a rarity, their shape does not determine quality—origin, processing and roasting do.

Ripeness Makes All the Difference

A single coffee tree often carries green, yellow and fully ripe cherries at the same time. That's why high-quality specialty coffees are usually harvested by hand over multiple passes.

Only perfectly ripe cherries contain the sweetness, complexity and balance that later become evident in the cup.

Long before coffee is processed, roasted or brewed, the coffee cherry has already determined much of its future character.

The right variety, healthy trees, ideal growing conditions and perfect harvest timing form the foundation of exceptional specialty coffee.

Long before the roaster is switched on. Long before water ever touches the coffee.
