Every exceptional coffee begins with its origin.
Why does a coffee from Ethiopia taste completely different from one grown in Colombia, even if both share the same variety? The answer lies in terroir—the unique combination of nature, climate and environment.
What Is Terroir?
The term terroir originally comes from the world of wine. It describes all the natural factors that influence the character of an agricultural product.
Coffee is shaped in exactly the same way. Elevation, temperature, rainfall, soil and landscape all influence how coffee cherries develop and which flavours eventually appear in your cup.
Elevation Makes the Difference
The higher coffee grows, the more slowly the cherries ripen.
Cooler temperatures give the plants more time to develop natural sugars and complex flavour compounds. This also creates denser beans that often produce more expressive flavour profiles during roasting.
Coffees grown at lower elevations generally ripen faster and often display more body, softer acidity and classic notes of chocolate, nuts and caramel.
Climate and Rainfall Shape Every Harvest
Sunshine, rainfall, wind and cool nights all influence coffee trees throughout the growing season.
The right amount of rain at the right time supports healthy plant development. Too much moisture can encourage disease, while prolonged drought places stress on the trees.
That's why no two harvests are ever exactly the same—even on the very same farm.
Soil Tells Its Own Story
Healthy soils provide coffee trees with water and essential nutrients. Depending on the region, mineral composition, drainage and soil structure can vary significantly.
Soil doesn't directly create flavour, but it provides the foundation for healthy trees and exceptional coffee cherries.
Landscape Creates Microclimates
Mountains, valleys and steep slopes influence sunlight, airflow and water drainage.
Well-drained terrain prevents water from pooling around the roots and supports slower, more even cherry development. As a result, different microclimates can exist within the same growing region.
Dense Beans, Greater Complexity
Slow-ripening coffee develops beans with a higher density.
These dense beans absorb heat more evenly during roasting, helping preserve delicate acidity, sweetness and complex aromatics in the final cup.
