Meet the Farmers
Nestled in the beautiful Departamento Risaralda in Colombia, the coffee farm Finca Milan has a history spanning over 40 years. Operated by Julio Cesar Madrid, a third-generation coffee farmer, and his business partner, master processor Andres Julio Quinceno, this farm combines tradition with a passion for innovation and high-quality coffee production.
Finca Milan spans 250 hectares in the central foothills of the Andes. At 1600 meters above sea level, with year-round temperatures between 18–28°C, the conditions here are ideal for coffee cultivation.
Julio does not only focus on the usual coffee varieties. He is on the lookout for rare varieties such as Sudan Rume and Laurina, known for their complex flavors. He is supported in this mission by his daughter, Maria Antonia Madrid, a biologist. Her research on the sensory effects of microbial starter cultures in coffee fermentation has refined the farm's processing methods, leading to unique and fascinating coffee flavor profiles.
The Cultured Fermentation Technique of Finca Milán
Finca Milan uses a special fermentation technique called cultured fermentation, similar to yogurt-making, to enhance the flavor and aroma of their beans. Starter cultures rich in microorganisms are used to transform the coffee. These cultures are mixed with locally available fruits and aromatic plants, then fermented together with the coffee.
Here's how it works: For the batch, freshly harvested coffee beans were mixed with the starter culture and melons. This mixture underwent a fermentation process in airtight containers, promoting anaerobic fermentation, for 144 hours.
The unique bacteria and microorganisms from the environment played a crucial role in this process. Throughout the fermentation, Finca Milan monitored factors such as pH, temperature, and sugar content. Once the fermentation process reached the desired point, the coffee was washed and sun-dried for 25 days, followed by five days of mechanical drying.
