The Story Behind the Beans: Aramo Washing Station
Ethiopia is considered the birthplace of coffee and is famous for its outstanding specialty coffees. The Yirgacheffe region is one of the most renowned coffee-growing areas in the world, known for its floral notes and bright, citric acidity. Its high altitude and long-standing coffee-growing tradition make Yirgacheffe a unique production area with a distinctive cup profile.
This coffee comes from the Aramo Washing Station in the Yirgacheffe Highlands. Around 800 smallholder farmers from the surrounding area deliver their harvested cherries to the station, where they are carefully sorted and naturally processed. While about 80% of the coffees in Aramo are washed, this coffee belongs to the exclusive 20% that are naturally processed.
The Natural Processing Method
Only the ripest coffee cherries are hand-picked and then dried in the sun on so-called "African Drying Beds" for about 15-20 days. Throughout the day, the cherries are regularly turned to ensure an even drying process. During this time, the beans absorb some of the fruit's natural sweetness, giving the coffee its signature fruity and sweet flavor.
Once the cherries reach a moisture content of around 13%, the husk is removed, and the coffee is prepared for export. The result is a lively, aromatic coffee with a silky texture that captures the essence of Yirgacheffe.
