The Story Behind Finca Las Flores
Huila is one of Colombia’s most renowned coffee regions – and for a good reason. Fertile soils, high altitudes, and a perfect climate make it an ideal location for specialty coffee production.
Finca Las Flores is located in the municipality of Acevedo and is run by Jhoan Manuel Vergara Ayure. Founded in the 1990s, the farm has grown from 18,000 coffee trees to an impressive estate with 90,000 trees. Since 2006, the Ayure family has focused on producing specialty coffee, a journey that began with their participation in the Cup of Excellence competition.
At Finca Las Flores, rare varieties such as Pink Bourbon, Tabi, Java, and Maracaturra are cultivated. However, one of the most outstanding lots is this Natural Chiroso. This variety, initially thought to be related to Bourbon, was rediscovered in Colombia in the early 2000s and is now renowned for its exceptional flavor profiles.
What is the Natural Thermal Shock Process?
The Chiroso coffee underwent the Natural Thermal Shock process – a specialized technique used to complete the fermentation process. It involves a combination of hot and cold water to open the pores of the coffee beans and fix volatile compounds.
This technique enhances the vibrant flavors of tropical fruits, lychee, and mango while maintaining a silky and buttery texture.
