Edwin Noreña is no stranger to the specialty coffee scene. With his farm Campo Hermoso in Quindio, Colombia, he sets new standards for modern processing techniques. His coffees are sought after worldwide – no surprise, as his focus is on quality, innovation, and clear flavor profiles.
For Red Candy, the variety Caturra was used – a particularly fruity selection. The coffee was processed using the honey method, which enhances its sweetness and fruitiness. The cherries are partially depulped and then placed directly on drying beds without being washed – a method that locks in the full flavor inside the bean.
The result: a creamy coffee with medium body, subtle citric acidity, and intense notes of red fruits, strawberries, cranberry – finishing with a cheesecake-like sweetness.
