Meet the Farmers

Nestled in the beautiful Risaralda region of Colombia, Finca Milán has a history spanning over 40 years. Managed by third-generation coffee farmer Julio Cesar Madrid and his business partner, master processor Andres Julio Quinceno, this farm combines tradition with a passion for innovation and high-quality coffee production.

Finca Milán covers 250 hectares in the central foothills of the Andes. At 1,600 meters above sea level, with year-round temperatures between 18–28°C, it offers ideal conditions for coffee cultivation.

Julio is not only focused on common coffee varieties. He seeks out rare varieties such as Sudan Rume and Laurina, known for their complex aromas. His daughter, Maria Antonia Madrid, a biologist, supports this mission. Her research on the sensory effects of microbial starter cultures in coffee fermentation has refined the farm’s processing methods, leading to unique and fascinating coffee flavor profiles.

The Cultured Fermentation Technique at Finca Milán

Finca Milán uses a special fermentation technique called cultured fermentation, similar to yogurt-making, to enhance the flavor and aroma of its beans. Starter cultures rich in microorganisms are used to transform the coffee. These cultures are mixed with locally available fruits and aromatic plants and then fermented together with the coffee.

Here’s how it works: For this batch, freshly harvested coffee cherries were mixed with the starter culture and melons. This mixture underwent fermentation in airtight containers, promoting anaerobic fermentation, for 144 hours.

The unique bacteria and microorganisms from the environment played a crucial role in this process. Throughout the fermentation, Finca Milán carefully monitored factors such as pH levels, temperature, and sugar content. Once the fermentation reached the desired point, the coffee was washed and dried in the sun for 25 days, followed by five days of mechanical drying.
