COLLECTOR’S ROAST No.2 – SIDRA
A coffee full of expression and intensity: El Diviso Sidra from Nestor Lasso is a spectacular example of how vibrant and aromatic the Sidra variety can be. This Natural Sidra explodes with ripe peach aromatics that remain present from the first sip to the lingering finish. Juicy sweetness, nectar-like depth and a refined floral structure give this coffee a fascinating complexity.
In the cup, you’ll find dominant notes of ripe peach, lychee and a syrupy, nectar-like sweetness, accompanied by aromas of jasmine blossoms, fruity sangria and a clean, fruit-driven finish. Meet the Producer
Nestor Lasso is part of the young, rising generation of Colombian coffee innovators. Only a few years ago, Nestor and his brother Adrian took over the family farm and made a deliberate decision: moving away from traditional commodity production and towards high-end specialty coffee and experimental fermentation methods.
Together with Jhoan Vergara, also raised in a coffee-farming family, they founded the project El Diviso. Two farms – El Diviso and Las Flores – merged into a centre of excellence where the three young producers combine their expertise to create exceptional coffees.
With the support of CATA Export, a multi-year phase of experimentation, testing and refinement began. Together they developed precise fermentation protocols that have gained international recognition. Many of their coffees are now used in barista competitions across Europe – including winners of the Brewers Cup in Ireland and finalists in Austria.
This Natural Sidra is an impressive result of this collaboration: a multi-layered coffee full of energy, intense fruit and remarkable clarity. The combination of the rare Sidra variety, Nestor’s sensory precision and a carefully controlled, multi-stage fermentation process makes it a true highlight of our Collector’s Roast series – and a glimpse into the future of Colombian coffee.
