Revolutionary Coffee Farming: The Story Behind the Beans

Finca Miramar in El Salvador, run by Fernando Alfaro, produces unique micro-lots created through innovative processing techniques. On the farm at the San Salvador Volcano, this coffee was anaerobically fermented to develop particularly exciting flavors.

After 96 hours in airtight barrels with controlled temperature and microorganisms, the cherries underwent a gentle drying process on raised beds for 30 days. The result is a coffee that impresses not only with its complex fermentation but also with its contribution to environmental protection by conserving water resources.
