The Story Behind Finca Las Flores
Huila is one of the most renowned coffee regions in Colombia – and for good reason. Fertile soils, high altitudes, and a perfect climate make it an ideal location for specialty coffee.
Finca Las Flores is located in the municipality of Acevedo and is run by Jhoan Manuel Vergara Ayure. Founded in the 1990s, the farm has grown from 18,000 coffee trees to an impressive 90,000. Since 2006, the Ayure family has focused increasingly on producing specialty coffees, a dedication that has been recognized through their successful participation in the Cup of Excellence competition.
The farm cultivates rare varieties such as Pink Bourbon, Tabi, Java, and Maracaturra, but one of its most outstanding lots is this Natural Chiroso. Originally thought to be related to Bourbon, this variety was rediscovered in Colombia in the early 2000s and is now celebrated for its exceptional flavor profiles.
What is the Natural Thermal Shock Process?
The Chiroso coffee undergoes the Natural Thermal Shock process – a special technique that completes the fermentation stage. A combination of hot and cold water is used to open the pores of the coffee beans and lock in volatile compounds.
This highlights the intense aromas of tropical fruits, lychee, and mango, while preserving a silky, buttery texture.
