Revolutionary Coffee Farming: The Story Behind the Beans

Don Luis Eduardo Campos is a true pioneer in the world of coffee. With over ten years of experience in experimental fermentation and thermal processing, he elevates the art of coffee refinement to a new level. On his farm "Cordillera de Fuego" in the Tarrazú region, Alajuela, he is dedicated to sustainable coffee farming on nutrient-rich volcanic soil.

His method of thermal processing is particularly revolutionary. Only the ripest coffee cherries with high sugar content are selected. A brief temperature shock of about 70°C caramelizes the fruit sugars in the cherries, giving the coffee an unparalleled sweetness and fruitiness. This step is followed by anaerobic fermentation under high pressure, embedding the flavors deeply into the beans. The result is a rich, balanced cup profile with notes of cranberries, cocoa, and cinnamon – and a seductive aftertaste reminiscent of Sachertorte.

Sustainability is as important to Don Luis as quality. His farm and parts of the wet mill are powered by solar energy, highlighting his approach to eco-friendly coffee farming.
